It’s the sensory overload that I love so much.
The sights, smells, sounds and tastes of Vietnam seem to all merge here, in Ha Noi. This northern city is one of my favorite food destinations in the world and is best known for it’s culinary delight, Phở. A deceptively simple dish to prepare, it’s a combination of meat, noodles made from rice, and fresh herbs in a rich, hot broth.
In the past, I’ve found it challenging to get the flavor of the broth just right. Then my wife and I discovered a secret ingredient while wandering the back alleys of The Old Quarter….. Dried Sea Worms.

The dried sea worms lend a unique umami to the broth and make it curiously fragrant.
