How to open durian fruit

The late Anthony Bourdain once said of the durian: “Your breath will smell as if you’ve been French kissing your dead grandmother.”

With the smell of rotting onions & vomit, the texture of room temperature cheesecake, and the taste of garlic & caramel, durian can be a challenge for the Western palate.  It took me several attempts to appreciate “The King of Fruits”, but now it’s become one of my favorite things to eat.

Thailand is the world’s leading exporter of durian, 90% of which is from the eastern provinces of Chanthaburi, Rayong and Chumpon.
