How can “yellow fried chicken” not be delicious?? I first discovered Ayam Goreng Kuning while walking the streets of Jakarta and later perfected the recipe. The key to this delicious fried chicken is boiling it in coconut milk and fragrant spices before the final fry.
Ayam Goreng Kuning Recipe (Indonesian Yellow Fried Chicken)
2 kg ( 4#) bone in chicken legs & thighs
2 inch piece ginger
2 inch piece galangal
2 Tablespoons coconut or vegetable oil
1 Tablespoon ground coriander seeds
1 Tablespoon ground turmeric
1 stalk lemongrass
1 Tablespoons sugar
2 teaspoons salt
2 each kaffir lime leaves
4 each salam leaves
16 oz (2 cups) coconut milk
16 oz (2 cups) water
Puree ingredients in blender except for leaves, coconut milk, and water.
Pour over chicken and marinate for 2 hours
Place chicken and marinade in large pot, cover with coconut milk and water, add lime leaves and curry leaves, bring to boil, then simmer for 30 minutes.
Place in refrigerator and allow to cool in the cooking liquid for at least 2 hours or overnight.
Next, pan fry or deep fry in coconut or vegetable oil until golden brown and hot throughout.
Serve with rice and dipping sauce
For dipping sauce, mix equal parts of Kecap Manis, lime juice, and sambal oelek. Finish with minced onion and salt.
