Ayam Goreng Kuning Recipe

Ayam = Chicken
Goreng = Fried
Kuning = Yellow

How can “yellow fried chicken” not be delicious?? I first ate Ayam Goreng Kuning while walking the streets of Jakarta and later tried to replicate the dish myself. The key to this delicious fried chicken is poaching it in coconut milk and fragrant spices before the final fry.

Ayam Goreng Kuning Recipe (Indonesian Yellow Fried Chicken)

Ingredients

2 kg bone in chicken legs & thighs
1 onion
2 inch piece ginger
2 inch piece galangal
2 Tablespoons coconut or vegetable oil
1 Tablespoon ground coriander seeds
1 Tablespoon ground turmeric
1 stalk lemongrass
1 Tablespoon sugar
2 teaspoons salt
2 each kaffir lime leaves
4 each salam leaves (omit if you cant find)
500 ml coconut milk
500 ml water

Method

Puree ingredients in blender except for leaves, coconut milk, and water.

Pour over chicken and marinate for 2 hours

Place chicken and marinade in large pot, cover with coconut milk and water, add lime leaves and salam leaves, bring to boil, then simmer for 30 minutes.

Place in refrigerator and allow to cool in the cooking liquid for at least 2 hours or overnight.

Next, pan fry or deep fry in coconut or vegetable oil until golden brown and hot throughout.

Serve with rice and dipping sauce

Dipping Sauce

For dipping sauce, mix equal parts of Kecap Manis, lime juice, and sambal oelek. Finish with minced onion and salt.
